The supreme discipline of brandies - fine brandies
Fine spirits belong to the category of spirits and are produced in Austria from distilled fermented, vegetable mash. Care is taken to ensure that typical aromas are retained. The term "Spiritus" is derived from the Latin and means "spirit". It is better known as witty, alcoholic liquids intended for human consumption. Fruit schnapps is the term used to describe those noble brandies that consist of a maximum of 1/3 alcohol of agricultural origin.
Fruit brandies and fruit spirits
Fermented fruit mash and fruit juices - also called must - are used for the production of fruit brandies, fruit waters or fruit spirits. Distillation produces brandy, which must contain at least 37.5% alcohol. If fruit wine from France is used as the basic product, the end product may call itself Calvados.
Fruit spirits include apple, apricot, quince, cherry, plum, eau de vie, Träsch from Switzerland and many more.
For fruit brandies, fruits that contain little sugar are used. For example, berries are used for this, as they cannot be fermented due to their low sugar content. The crushed berries are mixed with neutral alcohol (macerated) and then distilled. Typical berries are elderberries, blueberries, rowan berries, blackberries, raspberries and rose hips.
The quality and degree of ripeness of the fruits have a decisive influence on the quality and alcohol content of the distillate, the sweeter the fruits - the higher the alcohol content.
Root and tuber brandies
Fires are also produced from various roots, such as gentian, master, blood and bear roots. Tubers - like potatoes - have been used for the production of spirits since time immemorial. Vodka is a relatively prominent example of this (for more information, see the Vodka category).
