The term spirit comes from the Latin and means "spirit". Spirits are spirit-rich, alcoholic liquids that are intended for human consumption. In German-speaking countries, schnapps is also colloquially said.
Schnapps: Fermentation - Mash - Distillation
Various types of fruit or barley are fermented in the first step, in which the sugar is converted into alcohol and carbon dioxide with the aid of yeast fungi. In the course of the alcoholic fermentation, the temperature of the mash rises continuously. Two different forms of alcohol are produced during this fermentation process: methyl alcohol (toxic), which is excreted, and ethyl alcohol (ethyl alcohol).
The mash is then fired either in a simple flask or in a rectification plant.
Distillation in a simple flask is often carried out using pot still distillation equipment or the traditional Alambic copper distillation device. After the first distillation a pirate fire is formed, which is fired two or three more times. Finally, the pre- and post-run are separated from the high-quality middle run, which is further processed.
In the rectification process, the alcohol runs continuously through the still.
